Argh. I am in the thick of planning out a week of vegetarian Passover eating. Planning wise, I am, right now, at this moment, where I should have been on Tuesday or Wednesday. As they say in the restaurant biz, I am in the weeds.

But I’ll pull it out. Somehow it always comes together, even if its at the last minute.

My LifeTheme lately has been SIMPLICITY and I am sticking with it now with this menu:

Our second seder will have the same soup, and with a matzo mina (kind of like a lasagna, but made with matzo instead of pasta noodles) and roasted beets in place of asparagus.

And yes, we are still vegetarian and did not start eating fish.  The salmon is for Scott’s parents, who are joining us for Seder #1 before heading off to New York, where they’ll spend the rest of the spring and summer.
