Traditional Israeli Salad

It is about a billion degrees here and I was craving this cool and refreshing salad. Believe it or not, it is a breakfast staple in Israel. It is more to my taste with lunch or dinner, but however you serve it, it is quick and easy. All you do (literally!) is dice ‘n’ toss.

It is worth seeking out Persian cucumbers for this recipe. Wash them well and you can eat the thin peel.

As I say in the video, I like to remove as many seeds from everything as possible to make this salad very nice to eat.

Traditional Israeli Salad

Place in serving bowl:
* 4 roma tomatoes, diced (seeds removed and liquid drained)
* 2 Persian cucumbers, diced (including peels)
* 1/2 yellow, orange, or red bell pepper, diced
* 2 scallions (green onions), white parts only, chopped
* 1/2 c roughly chopped fresh Italian parsley

Toss gently with:

* juice of 1/2 ripe lemon, seeds removed
* 2-3 tsp extra-virgin olive oil

Season to taste with kosher salt and fresh ground black pepper.
